Madeira-Mushroom Gravy
 
 
2 tablespoons    Olive oil  
1 large    Chopped Onion  
2 cups    Sliced and stemmed shitake mushrooms  
1/3 cup    Madeira Wine  
1 tablespoon    Chopped Fresh Rosemay  
2 cups    High quality gravy  
1 cup    Low-sat chicken broth  
˝ cup    Whipping Cream  
 
1 Heat olive oil in large saucepan
2 Add chopped onion, sauté until golden
3 Add sliced shitake mushrooms, sauté until soft.
4 Add Madeira, chopped rosemary, store bought gravy, chicken broth, and whipping cream. Simmer 5 minutes, whisking constantly. Season with salt and pepper.
 
Yield: 3 1/2 Cups
